Ingredients

  • 3 Pound Chuck Roast
  • 1/2 C Beef Broth
  • 1/2 C Balsamic Vinager
  • 2T Soy Sauce
  • 1T Honey
  • 4 Cloves Garlic - Minced
  • 1 tsp dried Rosemary and Thyme
  • 2 Red onions
  • 1 Pound Fingerling Potatoes
  • 1 Pound Baby Carrots
  • 8 oz Whole Mushrooms, halved (Optional)

Directions

To start, place a three-pound chuck roast into your slow cooker. In a small bowl, whisk together ½ cup beef broth, ½ cup balsamic vinegar, and 2 tablespoons soy sauce for a deep, savory “umami” flavor. Stir in a tablespoon of honey, four cloves of minced garlic, and a teaspoon each of dried rosemary and thyme. Pour this mixture over the roast, then tuck a few halved red onions, fingerling potatoes, and some baby carrots around the sides. I like to add mushrooms in the last hour or so for a little extra earthiness.

Set your crockpot to low for 8 to 10 hours. As the beef slow-cooks, it will become incredibly tender and soak up all those complex flavors. When you’re ready to serve, the savory-sweet glaze on the beef will make the dark fruit and cocoa undertones of the 2023 Venus Syrah truly sing.
